I will miss my Multiply community, you guys have been the bomb! I hope that you would all visit me at my new "home" and welcome it with open arms.

I just want to make one thing clear:  www.jenniepperson.com is not a food blog. Even though it may appear to be one, it's not. Really.  I swear on my herb garden. ;D

It's just that it's the holidays and our fridge is filled with... you guessed it... FOOD! I hate leftovers. In fact, we hardly have them because we cook just the right amount for each meal. Holidays are different though, aside from overcooking (and overeating), we received so much food as gifts so I had to be creative! Ergo, the food blogs.

Let's start with butter (in my opinion, it's a good start). Remember how I blogged about receiving tubs of butter? After I made all the variations of herb, garlic, and truffle butter I still have well, butter!

Here's one recipe I made to make use of it:

Cream Dory with Butter, Herbs, and Capers

EVOO
Salt (use very little as the herb butter and capers are already salty)
Pepper
Capers

Fillet of cream dory or any fish fillet

Easy peasy:

Step 1: Add 1 tbps of herb butter and 1 tbsp of EVOO in a  pan

Step 2: Fry the fish in butter and EVOO. Add salt and pepper to taste.

Step 3: Once the fish fillets are brown, add the capers (sorry I forgot to take a photo)

Step 4: Serve with a smile!:D

Tip: If you find that you used too much salt on the fish, just squeeze lemon to neutralize the flavor.

This dish is simple, easy, delicious, and healthy (if you use 1 tbsp of butter only)! Something to consider eating after pigging out during Christmas. Haha!

I just want to share with you one of my Christmas gifts to Aryanna. I think a lot of moms and kids would appreciate these lunchboxes.

I keep several lunchboxes at home for the family because we're big on cooking and bringing food to school and at work. The challenge though is how to keep them all in storage. Lex N Go silicone collapsible lunchboxes (available at Dimensione) answered my problem!

If you love Christmas/holiday tableware or you want to start building a collection, here are some tips:

  • Choose dinnerware sets to match every occasion. This is applicable to those who want tableware themes for different events and family celebrations.
  • When it comes to Christmas plates, start using them at home as early as December 1 to January 1. Use the festive plates everyday during those months to maximize your collection. Trust me, your family will love it!
  • Christmas plates need not be expensive, they just have to be special.
  • Mix and match colors, textures, and styles. In the end, when you like every piece you own, it will all come together and create a style that is your own.

I have three assorted sets of Christmas dinnerware. Don't judge me. Haha! Instead, I hope my collection inspires you to create something special for your loved ones this Christmas!

Spode 'Christmas Tree' plates

This Christmas is extra special because I'm on my way to completing my Spode 'Christmas Tree' dinnerware. I first bought the dinner plates at Rustan's in 2007. I've never used them because I couldn't find anything that would really go with the big plates. Three years later, I found the Spode bread plate plus, a big serving bowl! All I need now are the coffee mugs, saucers and maybe even salad or cereal bowls then my collection will be complete. Wish me luck!

Tip: If you want heirloom pieces, I suggest that you invest on a classic brand of dinnerware with classic designs. A lot of Spode collectors use the plates not just for eating but also for home decorations.

The red plate charger was just a random plate I bought at The Landmark to add contrast to the green and white colors.

Tip:
Check your parents' or grandparents' stash for vintage glasses to go with your classics. I've had these Christmas glasses my parents bought during the 70's. They are brandless but they go well with the 'Christmas Tree' plates.

I bought this Multiple Choice set two years ago during a sale. The whole collection (service for four, not inclusive of the the flatware and glass) cost P2,000+ only! I bought exactly the same set last year, again, on sale! I've finally completed my service for eight set!

Tip: Buy dinnerware during sale and keep an eye for special designs.

Before I had holiday plates, I only used my classic bone China and mixed it with Christmas ornaments for a festive appeal.

It's funny, my husband told me that this particular table setting is so me because there is only a champagne glass and not a sight of any other goblets. Haha!
 
Of course, depends on what drinks you're going to serve, you can add extra glasses to the setting.

Before the party ended, Manny decided he wanted to raffle off one million pesos! Originally, they were raffling off a car as the grand prize plus gift packs. Then out of the blue, MP decided he wanted to make someone a millionaire, so he shelled out P500,000 and Gov. Chavit Singson added the other half.

Gov. Singson and Jinkee suggested to Manny to draw two P500,000 winners instead of one big winner but MP was adamant that he wants to send home a millionaire. Wow!

I won... a gift pack. Sayang, sana nabili na sana kita ng iPad if I won the grand prize! Haha!

Who remembers the Jelly Kelly bag? I had one before in orange. It was a gift from my client, Irene. Owning the gummy tote was cute for the first 24 hours then reality settled in... It was just a cheeky knock-off of the Hermés Birkin bag.

This time, another "Jelly Kelly" from Taipei has surfaced and it's called the Banana Taipei or the Banana Birkin. One of my Twitter followers asked me what I thought of it. It could look cute on some but it's not for me. Apparently, these "Banana" bags are hard to get, having also a wait list just like the real Hermés Birkin. *gasp*

I've got six sticks of butter in my fridge. That's not right.

It seems like these days (at least in my case), butter is the new fruit cake! Haha! I received several sticks of fresh butter from three different farms! Don't get me wrong, the Eppersons love butter but six sticks? Nuts!

I asked Aryanna to bake a cake for her friends so that she could use up some of the butter. Well, that got rid of some of it but there are still four sticks left! I want to give some to my friend Pepper because he loves matikilya (he even drinks it! @.@) but I want to save his life so never mind, Peps. LOL

Tip: I used two cloves of garlic for this recipe and it was too much. The garlic overpowered the truffle oil flavor so I suggest you use only half or one whole clove.

Step 1: Thaw butter from the fridge till it's soft enough to whisk it. Mix in the chopped fresh dill, flat leaf parsley, and minced garlic.

Step 3: Drizzle 1 tsp. of truffle oil

Step 4: Whisk the butter till everything is mixed in. Don't overwhisk it to keep the butter soft and light.

Step 5: Transfer the garlic herb truffle butter in a container and let it cool in the fridge for an hour or till it sets.

While shopping for plato-platuhan a few weeks ago, I met Paco Magsaysay who was also buying tableware for a dinner party he was hosting. While chatting with Paco, he mentioned that one of his passions is making homemade gourmet ice cream. I was interested because growing up, my dad used to make homemade ice cream using an electric ice cream maker he bought in Hong Kong. My siblings and I thought it was the coolest thing! It was the best ice cream I've tasted!

Paco and I agreed that to make good homemade ice cream, one must use the freshest ingredients. When I asked him where he gets his milk and cream to make ice cream, he mentioned that he has a farm and that he breeds cows. Coolness. He also offered to send me a few bottles of fresh milk. Double coolness.

Low and behold, a few days later, check out what took over our fridge...

Funny thing, I thought he sent us vanilla ice cream so I put it in the freezer. When we tasted it, Aryanna goes, "uhm, mom, it's either he made us butter-flavored ice cream, which is weird, or you just put butter in the freezer." Turns out, it was butter! Haha!

Everything Paco sent us was divine! Nothing beats farm fresh products! Let's support local farmers!

I will be putting an order this week for more low fat milk, butter and quesong puti!

When it comes to iconic dishes like the Pinoy favorite chicken adobo, I don't try to knock off the recipe as I know it will be a losing battle. I leave that to Nora Daza, my grandmother, and my mom.

Everyone has their own version of chicken adobo and what makes it delicious is the sauce. The oil, fat, and chicken bones create a savory base for the sauce. By adding soy sauce, vinegar, laurel leaves, garlic, sugar and peppercorns make this chicken stew irresistible! The burst of sweet, sour, tangy flavors, and fall-off-the-bone chicken meat promises a complex yet mouthwatering dish but fattening too! LOL

That being said, I don't attempt to copy the classic recipe. My version of the chicken adobo is healthier (less fat and sodium) yet very tasty. Also, my recipe is easy and cooks in no time!

Aaand... Due to insistent twitter followers demands (naaaks!), here's my recipe:

extra virgin olive oil (EVOO)
vinegar
muscovado sugar (has 11 calories/ 4 grams. When produced under regulated conditions, it is nutritionally richer than other brown sugars or refined sugar)
fresh ground pepper
cayenne pepper (optional)

skinless chicken breast fillet, cubed

oyster sauce, tamari sauce (you can buy this at Healthy Options)

You can make your own chicken broth or buy boxed ones from Healthy Options.

Step 1: Heat up EVOO in a pan

Tip: Invest on a cast iron pan. If you take good care of it and season it regularly, it should last a lifetime plus, it holds the heat better than other pans. Great for cooking steak and chicken.

Step 2: Brown garlic.

Step 3: Set garlic aside. We just need to infuse the EVOO with the garlic juice and use the fried garlic as garnish.

Step 4: Set your pan in high heat. Add the chicken breast fillets. Season with fresh ground pepper.

Step 5: When both sides of the chicken are brown...

... add the chicken broth and dried laurel leaves.
I use 3/4 cup chicken broth to my 1/2lbs lbs chicken fillets.

Step 6: Add the tamari sauce, oyster sauce, and vinegar

Tip: For less sodium, I use 2 tbsp. of oyster sauce and 1 tbsp of tamari sauce. No need for salt.

Step 7: Add 1 tsp. of muscovado sugar

(Optional) add cayenne pepper

Step 8: Simmer the sauce (uncovered) for 5-8 minutes until it thickens.

You want to achieve a dark brown color of the sauce and a slightly thick texture.

Step 9: Garnish with the dried laurel leaves and fried garlic on top.
